After four years in business at 1201 Princess St., the family owners behind Folks Café are putting the finishing touches on their second location.

The new café, located at 706 N. Fourth St., is scheduled to open the first week in December.

Tammy and Juan Pacini came to Wilmington from California in 2009 to help their daughter and son-in-law Tammy and Josh Woolgar open a business. At the time, Alan Swart, the original owner of Folks Café, was looking to sell, and the Woolgars and the Pacinis felt that this was their chance. The business was already established but they would have the opportunity to make it their own.

When the Woolgars decided to return to California after about a year, the Pacinis took over, along with another daughter Paula who previously owned the Olive Tree Deli.

“I’m really proud of the work we’ve done here, and we are very excited to be a part of the revitalization that’s taking place in the Brooklyn Arts District,” Tammy Pacini said of the new location.

Folks Café purchases organic and free-trade coffee beans from around the world and roasts them in small batches, no more than five pounds at a time. This ensures maximum freshness and flavor, according to Tammy Pacini.

She manages the business side of things while learning as much as possible about coffee and passing that knowledge on to her customers. Once the new café is open, all of the roasting will take place at the Fourth Street location.

“I love learning about coffee, where it comes from and how it is produced,” she said. “I want to share my passion for coffee with all of my customers.”

While the roasting will take place on Fourth Street, Juan and Paula Pacini will be in the kitchen on Princess Street preparing pastries as well as the eatery’s full breakfast and lunch menus. The new café will offer some baked goods, but its menu will not be as extensive as that at the Princess Street location.

The new café has several small tables as well as a larger communal table. It also offers a small conference room that can be reserved for meetings and is equipped with a fax and copy machine.

Tammy Pacini plans to host coffee-tasting events as well as roasting and brewing demonstrations at the new location. The café will feature traditional espresso style drinks as well as pour-over brewing, a popular brewing style in the Pacific Northwest.
