Three local restaurateurs are creating a buzz by joining forces with the creation of Olo Cantina.

Drew Flynn, formerly of Hell’s Kitchen, Sean Cook of Shuckin’ Shack and William Mellon of manna bring to the table not only years of experience but a passion for good food.

“We’re not looking to reinvent the wheel here,” said Mellon of the restaurant's Tex-Mex theme. “But we are looking to create a really great neighborhood restaurant and bar with high quality Tex-Mex food.”

The partners originally planned to keep the Firebelly’s name, but legal matters led to the creation of a new establishment. The name Olo, Cook said, comes from one of the first ever surfboards used by Hawaiian chiefs and noblemen.

Construction is currently under way to create a laid-back, surf cantina type of vibe. The main dining area is separate from the bar, where large screen televisions will carry all the major sports packages. The space allows for seating for about 75 inside and an additional 75 on the outdoor patio, which also has a bar.

According to Mellon, chef Jameson Chavez of manna will be an integral part of the menu-building process. While specific items are yet to be released, the menu will offer a variety of Tex-Mex staples such as tacos, burritos and quesadillas. The bar will focus on craft cocktails, with a special emphasis on a variety of craft margaritas.

A mid-December opening is expected.

Olo Cantina will be located at 5607 Carolina Beach Road, Suite 130.
