Mayfaire Restaurants: Mama Fu's Out, Which Wich In

Mayfaire Town Center’s franchise restaurant Mama Fu’s Asian House locked its doors for good this week.

“Mama Fu’s lease did expire,” Mayfaire spokeswoman Paige Kon said. “But we do have a lot of great potential tenants interested.”

No word yet from the company as to why the unit closed. Mama Fu’s opened here in late 2005.

The company appears to be growing after facing failure in and prior to 2008. That year, Mama Fu’s largest franchisee, Randy Murphy, bought out the struggling business and started rebuilding the brand.

Mama Fu’s recently signed its largest franchise deal to date, adding 18 units in the Houston area, the company reported. Murphy plans to open between eight and 10 new stores around the country in the next 12 months. Plus, 49 Mama Fu’s franchises are in development.

As Mama Fu’s clears out, the franchise sandwich shop Which Wich is slated to begin construction Wednesday at another Mayfaire space behind the casual clothing store Buckle.

Projected to open in late July, Wilmington Which Wich franchisee Ben Brown said, the eatery serves 50 kinds of “customizable” sandwiches as well as vegetarian and low-calorie options.

Guests use red Sharpies to write their orders on sandwich bags marked with Which Wich’s menu. After they’ve eaten, guests may use the same red Sharpies to draw on their bags and then hang their “artwork” on a community wall.

Which Wich locations also feature music and newspaper stations and free Wi-Fi in a sort-of “new-age” black and gold setting accented with stainless steel and light, brushed wood, Brown said.

Brown, of Wilmington, previously worked as a waiter at Circa 1922 downtown and Brasserie du Soleil at Lumina Station. Which Wich is Brown’s first sole proprietorship.
