Chop's Downtown Location Offers Extended Hours, Late-night Menu

Just a few months after a remodel of the dining room, Chop’s Deli has extended the hours of its downtown location.
 
The remodel, said co-owner Brad Corpening, was designed to allow for table service for dine-in customers. Corpening, who operates three Chop’s locations with partner Chris Graham, said that prior to the remodel, there was often a line out the door for customers waiting to place orders. And a line out the door was often a sign to potential customers that the wait would be too long or that there might not be anywhere to sit.
 
By offering table service, the deli can now serve customers at their tables from start to finish, allowing the counter to service take-out orders.
 
“We now have a much more effective use of the space, and we can provide more efficient and personal service,” Corpening said.
 
Now gearing up for the summer season, the dining room will be open until 8 p.m. Monday through Saturday, and a walk-up window is open Friday and Saturday from 11 p.m. to 3 a.m. Corpening said it’s likely that those hours will extend to additional days, depending on the flow of customers.
 
“The options for late-night food downtown are limited, and our format in particular is under-represented, so we saw this as an opportunity to capitalize on that,” Corpening said.
 
The late-night menu currently features three items: a pot roast sandwich with melted cheese, a pulled pork barbecue sandwich and cups of macaroni and cheese. Corpening said everything will be hot on the line for quick service.
 
“We look forward to developing this segment of the business,” Corpening said. “Customer feedback will be an important part of how we continue to grow.”
