Owners of True Blue Butcher and Table are opening an event venue, Ellipsis, in soon-to-close Mariposa Tapas Bar, the We Are True Blue brand announced on Tuesday.
Mariposa Tapas Bar located in the South Front District on South Third Street will serve its last dinner Saturday, according to a news release.
The grand opening of Ellipsis is scheduled to take place on Oct. 13, with a “Recover Your Luck: A Friday the 13th Redemption Party” event with cocktails and small bites, according to
its website.
Ellipsis is difficult to define, said We Are True Blue owner Bobby Zimmerman. The venue will primarily offer ticketed food and beverage events but also nonculinary workshops such as pottery and gardening classes.
Zimmerman said that closing Mariposa to open Ellipsis is bittersweet, but the timing felt right to launch a project he has dreamed about since before Mariposa opened.
“It felt like we needed the stage to perform on, and it felt like we were ready to go onstage,” he said.
Ellipsis’ ticketed format eases operations, as walk-in dining can create chaos in the restaurant business, Zimmerman said. The e-commerce-like platform allows Zimmerman’s team to easily serve its patrons, he said.
Dining events include weekly options such as New Orleans-style jazz brunch every other Sunday. Other one-time events such as culinary pop-ups and collaborations with local businesses are on the books as well, Zimmerman said.
The event Zimmerman said he is most looking forward to is “Burger Shakedown” on Oct. 15, which is a collaboration between True Blue’s burgers and a spiked milkshake tasting menu from End of Days Distillery and Boombalatti's ice cream.
Events and tickets are up on Ellipsis’ website through March.
The name of the new venue plays on the idea of anticipation and mysterious experiences, according to the release.
The venue’s décor will shift depending on the night’s theme, eventually wall color could change depending on the vibe of an event, according to We Are True Blue.
“The place will become unrecognizable” for some events, Zimmerman said.
Zimmerman opened Mariposa Tapas Bar
in 2021, with a Spanish-inspired small bites menu. It was the first expansion of the We Are True Blue brand in the South Front District, followed by True Blue Butcher and Barrel restaurant.
“Mariposa will be missed but not forever gone,” Zimmerman said. “It was such an incredible brand and it felt so good, and I was so proud of that brand, but it's time to move on."
Zimmerman said people have sent his team suggestions for events since the announcement Tuesday morning.
He assures people that Ellipsis will put on Mariposa tribute events to serve the restaurant’s fans their favorite menu items once again. He said the first Mariposa tribute night is scheduled for Nov. 18, and ticket purchases have already started rolling in.
