Aubriana's Welcomes New GM, Sous Chef

Downtown Wilmington restaurant Aubriana’s has welcomed two new members to its team, general manager Nicole Boudrieau and sous chef Josh Seward.
 
Boudrieau earned a Level II sommelier certification from the International Sommelier Guild and is an alumni of esteemed steakhouses such as Morton’s and Shanahan's. She recently relocated to Wilmington from Denver.
 
Seward is a graduate of Le Cordon Bleu and recently relocated to Wilmington from Indianapolis. His background is in fine dining, having worked for Hilton Hotels and The Capital Grille.
 
“We’re very pleased to have both Nicole and Josh joining our staff,” said co-owner Carol Roggeman.
 
Roggeman said this is the first time in several years that she and co-owner Ron Jackson have had a general manager.
 
“We have been handling everything ourselves for the past three years,” Roggeman said. ”It really feels as though a huge weight has been lifted off our shoulders.”
 
Boudrieau said the kitchen will be rolling out a new fall menu and private party menu this week, as well autumn cocktails.

Her focus over the next few months will be on assisting customers with private holiday events and revising the restaurant’s wine list.
 
Aubriana’s, which is open for dinner Tuesday through Saturday and is located at 115 S. Front St., welcomed a new executive chef, Tom Ryerson, in July.
