Ellipsis, the event-based dining concept from the We Are True Blue restaurant group, has announced a shift in its revolving dining platform. Rather than hosting individual ticketed events, the concept will now feature a reservation-only dinner service with a new theme every six weeks.
While previous Ellipsis events such as NOLA Brunch, Take Out and Mariposa Date Night were met with enthusiasm, customer feedback highlighted challenges with scheduling and availability.
“We tried the ticketed events, and while they had their charm, we realized that predictability and broader timeframes were essential for our guests to truly enjoy what we offer,” said Bobby Zimmerman, owner of We Are True Blue restaurant group. “This new approach will allow more people to experience our unique concepts without the hassle of scheduling conflicts.”
The first concept under this new model, Farfalla, offers dishes that aim to highlight the best of summertime in Italy and will be available Wednesday through Saturday from 4 p.m. to 9 p.m. Reservations are required and can be made via the
Ellipsis website or
Open Table.
Farfalla’s menu, which will launch July 12, features Italian dishes with influences from throughout Southern Europe and the Mediterranean. Some of the highlights include a Summer Vegetable Soup with olives, capers and artichokes, Olive Oil Poached Fish with broccolini, hummus, lemon and basil and Beef Tenderloin with Chimichurri. There is also a vegan take on Cacio E Pepe with cauliflower and almond ricotta, and three seasonal desserts.
“This idea of an extended concept with a full service, full menu opportunity seems way more attractive not only to me and my team but also to our guests,” Zimmerman said. “Our guests get to know the concept a little more deeply and maybe even come back a second time.”
Zimmerman said that seasonality will be a big part of selecting the concepts going forward. He will collaborate with his entire team of chefs on the concepts and menu items as well as the wine and cocktail selections for each theme.
Fans of Ellipsis’s Friday Recovery Hour will be pleased to know that this event will continue to take place each Friday from 5 p.m. to 7 p.m. Reservations for the Recovery Hour can be made independently of Farfalla reservations, or guests can book a table for Farfalla and enjoy $5 martinis during that time.
While Zimmerman didn’t reveal any specifics about future concepts that are in the works, he said the concept following Farfalla is a fan favorite.
