Thyme Nears For Restaurant Opening

When On Thyme opens its first brick-and-mortar restaurant, located on Castle Street, fans of the business's food truck and catering operations – as well as new customers – will find a unique spot in which to dine.

Business owners opted to establish a physical storefront after seeing the success of their food truck. 

On Thyme has embraced the trending “vibe” theme in the restaurant business, and patrons can enjoy a lounge-like ambiance complete with music or other acts while eating, according to owner Corey Smith. To further enhance the atmosphere, the restaurant will showcase the work of local artists, an example of which is the 52-foot mural gracing the restaurant’s facade.  

No matter how hip the atmosphere, Smith promises that the food is still down-home good.  His homemade, hand-rolled Philly cheesesteak egg rolls, packed with sirloin, roasted peppers, onions, and three different cheeses will be on the menu, as will his Pow Wow Shrimp, which is served with spicy Sriracha sauce.

Entrees include Smith’s signature po’ boy sandwich, made with fried shrimp, lettuce, tomato, and purple cabbage, all topped with his own "thyme sauce"; Castle Street burger, which sports two smash burger patties, Colby cheese, caramelized onions, bacon, and Smith’s thyme sauce; and wings, which are served with 10 different wet sauces and six dry rubs.

Smith also plans to offer a lot of specials, some of which will be tied to themes. For example, if a reggae band is playing on the restaurant’s deck, Smith may serve Jamaican or Caribbean food.

Dessert selections will be on an ad hoc basis. However, Smith promises his Auntie’s Banana Pudding will be a frequent option. It’s made the real way, he said, with meringue on top. 

In addition to soft drinks, the restaurant will also have beer and wine.

Though On Thyme is relatively small, seating 32 inside and 24 outside, Smith promises that it will be something special. 

“I’m bringing something different to our city,” he said. “On Thyme is more than just a restaurant. It will have entertainment, a mixture of everything, and a bar-type vibe. It’s a nice, wind-down, good eating place.”

On Thyme will operate at 918 Castle St. once it opens. Smith said he didn't know an exact opening date as he is dealing with supply chain issues.
