Wilmington’s Cargo District is becoming more spirited.

The Starling Whiskey and Wine Bar opened last week at 1612 Queen St., in the heart of the growing community.

A project of local photographer Matthew Ray and caterer Abbye McGee, The Starling features an extensive bourbon menu as well as a selection of other whiskeys, including “antique” whiskeys.  

The Starling’s selection of wines is a mix of European, Australian and New Zealand vintages as well as wines from California and Oregon. Some are offered by the glass, others by the half-bottle or bottle.

A small selection of beers – including three from Wilmington’s Flying Machine Brewery – is on the menu.

The cocktail assortment features whiskey concoctions, but there are a few standards, including mimosas and cosmopolitans on the list as well.

To accompany its spirits, wines and beers, The Starling offers a charcuterie box and roasted nuts.

“The Starling’s greatest claim to fame is the award-winning cocktail makers behind the bar and our extensive wine and whiskey collection featuring some antique bottles you won’t find anywhere else,” The Starling’s website states. “Our expert staff are here to make your experience one you won’t soon forget. We are also very proud to offer a killer menu of mock-tails and [non-alcoholic] beers. Look for live music, wine- and bourbon-pairing dinners on our top deck, bourbon and wine tasting clubs and more.”

The new establishment is a private club, so anyone wishing to drop in must first fill out a membership form online and pay a nominal $1 annual fee. The form and complete information about the club are available online. The Starling is open Wednesday through Thursday from 4 p.m. to 10 p.m. and Friday through Sunday from noon to 10 p.m.
