Rolled & Baked Planned For Castle Street District

A new restaurant is set to open next year in the Castle Street Arts & Antiques District.
 
Rolled & Baked has recently leased the space at 509 Castle St., which will undergo renovations and is set to open sometime in the spring, according to Terry Espy, president of MoMentum Companies.
 
The 3,500-square-foot building was previously going to be the site of Prestige Brewing until the project fell through, Espy said. Now the building is undergoing renovations for the restaurant, owned by Charlotte couple Bill and Anna Ward.

The couple hired Top Chef Season 3 contestant Micah Edelstein as culinary and creative director as well as the executive chef. Edelstein is a chef from Portland, Oregon, where she most recently owned The Feisty Lamb, but will relocate to Wilmington for the project, according to a news release.

Edelstein's enthusiasm, talent and experience are what won the owners over, when they made the decision to relocate from the Charlotte area and bring her on board, officials said. She has more than 23 years of experience in the service industry. 

“We leave the menu to the expert, of course, but we gladly taste test anytime,” said Bill Ward in the release. 

Edelstein will be handling the kitchen design, front-of-house layout and the interior, along with the menu, bringing the lessons she learned from her last two restaurants, the release said. 

Rolled & Baked will boast a "fast-casual chef-inspired concept" that's "turning the world of biscuits and southern cuisine as you know it upside down imbuing the classics with eclectic global flavors," according to an announcement on the restaurant's Facebook page.

Flavors are inspired by Edelstein’s travels around the world during her career, officials said in the release. 

Dishes will have names like the Reborn Southerner, Duck Hunt and The Count of Monte Cristo. Edelstein will use local ingredients, sourcing "ethically raised proteins and from green practicing farms," officials said.

The restaurant will include LED lights and low-flow faucets with the aim of espousing environmentally-thoughtful business practices and decisions, officials said.

“Castle Street businesses are thrilled to have a new addition to their block,” Espy said in the release. “I believe you will continue to see a growth in the historically antique district to other one-of-a-kind businesses that boost the neighborhood and attract attention. I can’t wait to eat there.”

Officials with Rolled & Baked said in the Facebook post that they hope the eatery, which will be open for breakfast, lunch, brunch and Biscuit Hour, will "become an asset to the community and a fun draw to the Castle Street Art & Antiques District."
