The Red Eye Bakery Works On Final Touches

The owner of a new bakery in the Brooklyn Arts District is putting the final touches on the business before opening the doors.
 
Elaine Brown will operate The Red Eye Bakery at 1013 N. Fourth St.
 
“We’ve got all the equipment. We’ve passed all the inspections,” Brown said. “Everything’s on. It’s just a matter of bringing it all together.”
 
Brown said, depending on how long those last-minute details take, she could expect a soft opening in the coming weeks and official opening soon after.
 
The neighborhood bakery, in 750 square feet of space renovated this year by the building’s owner, will feature items baked by Brown with opening hours of 5 a.m. to accommodate early risers. That means Brown will be at the ovens even earlier than that.
 
“Croissants are my specialty,” she said.
 
Brown also plans to carry a variety of breakfast and dessert pastries as well as cookies, tarts, quiches and breads. The bakery will feature coffee and espresso from Black Rifle Coffee Co., a veteran-owned roastery in Salt Lake City, Utah.
 
The interior will include a sitting area and room for three tables, which are being built from reclaimed wood. Renovations of the space, previously empty, have been ongoing for several months, Brown said, with the building owners adding other historic touches such as incorporating wood from a former, 1860s church in Snow Hill, North Carolina.
 
Once open, the bakery’s hours will be 5 a.m.-2 p.m. Tuesday-Sunday.
