Islands Fresh Mex Grill Opens In Monkey Junction

Islands Fresh Mex Grill will open its fourth location at 5620 Carolina Beach Road on Thursday.

The fast-casual restaurant specializes in build-your-own tacos, burritos, enchiladas and quesadillas.
 
Owner Lucas Jones opened his original Islands location on Racine Drive in 2008, followed by an Ogden location in 2013 and a downtown location just a block from Cape Fear Community College last July.
 
Jones credits much of the restaurant’s success to the consistent quality of the food and its affordability.
 
The menu will be the same as at other Islands locations, with $1.99 tacos (any variety) available every day for lunch with the purchase of a drink, and $1 chicken or ground beef tacos every night with the purchase of a drink.
 
“I’ve wanted to move into the Monkey Junction area for a while now because I feel there’s a need for fast, fresh and affordable food in that area of town,” Jones said.
 
The new location is the company’s largest yet, with 5,000 square-feet of space and a seating capacity of 180.
 
Jones said there are no immediate plans for a grand opening celebration, but he might put something together in the coming weeks.
 
Islands Fresh Mex Grill restaurants are at 260 Racine Drive, 7032 Market St., 310 N. Front St. and now 5620 Carolina Beach Road.
