Kabob and Grill opened this past weekend in the historic riverfront Quince Building.

Owners Mona Kaur, Gurdeep Singh and Amarjit Singh held a soft opening for about 75 guests on Friday. The team previously owned India Mahal, which closed last year in Wilmington after nearly two decades.

Kour is excited to have the opportunity to bring this concept to downtown Wilmington.

“There’s no better place to be,” she said. “It was time for us to bring our cuisine out to where the people are, to be accessible to both locals and tourists. With India Mahal we were limited to customers who were familiar with Indian food and knew exactly what they wanted. But now, it is our hope that we will attract customers who are curious about our food, who are interested in trying something new while enjoying this great location.”

Chef Sanjay Verma specializes in Northern Indian cuisine, and kebobs prepared in traditional tandoor ovens are his specialty. But Verma wants diners to know that in addition to traditional Indian fare they can also expect what he calls Indian fusion: a mix of Indian and other global flavors.

“I’m definitely not afraid to experiment with new flavor combinations,” Verma said. “We will incorporate South Asian and Mediterranean flavors and our menu will evolve as we gain feedback from our customers.”

Verma also stated that the current menu will continue to expand in the next few weeks as the restaurant moves from a soft opening to full service. A full bar is available, including a variety of Indian cocktails and beers.

Verma prepares all of the restaurants spice blends and also makes his own yogurt. The menu features a variety of meats and seafood but also many vegetarian entrees as well as vegan and gluten free options. Kebabs are served with sautéed onions and peppers, basmati rice and the chef’s special curry sauce. Many of the traditional Indian dishes are served with basmati rice and Nan bread and can be prepared mild, medium or spicy upon request.

The waterfront building, located at 5 S. Water St., was previously home to Delphino Dos and Mixto. While it has has undergone a transformation in décor with all new artwork and lighting, the original structure of the building has been preserved. The restaurant currently seats about 100 inside and will be able to seat up to 40 on the outdoor patio that overlooks the river.

Kabob and Grill will also offer catering for corporate meetings, private parties and weddings, both on- and off-site.
