Coquina Fishbar, which opened about three months ago at Mayfaire Town Center, is now serving Sunday brunch.
Scott Clemons, who owns and operates the restaurant along with his family, said it has always been part of the plan to launch a brunch service once the day-to-day operations were up and running smoothly.
Clemons said the restaurant has been well received thus far, but admits that March is a difficult month for restaurants.
“The seasonal restaurants are gearing up for the summer and sometimes kitchen staff will gravitate towards those restaurants, which are only open for the season and are willing to pay a few dollars more,” Clemons said. “That can be tough to compete with.”
Clemons, who also owns three Hibachi To Go locations, said any time he opens a restaurant he has a projection of where he’d like to be, but having opened during a pandemic, it’s almost impossible to gauge at this point.
“I’m happy where we’re at,” Clemons said. “Word-of-mouth is starting to spread and the key now is to continue to bring new people in and to retain current customers.”
Coquina held its first brunch service this past Sunday, offering its full seafood bar with oysters, clams, mussels, peel n’ eat shrimp and crab legs, along with a range of brunch options.
Guests will find everything from fried chicken and waffles to tacos and salads, with choices for kids as well. Coquina also serves a traditional and a crab benedict, a bread pudding French toast, seafood quiche, steak and eggs and biscuits and gravy, among other dishes.
Coquina serves a full line of brunch cocktails, including build-your-own mimosas, oyster shooters, French toast shooters and the Chubby Mary, adorned with deviled crab, okra, bacon and a pickle.
Live music is scheduled every Sunday from noon until 3 p.m. Reservations are always accepted and are encouraged for Easter Sunday brunch.
At 5,000 square feet, Coquina Fishbar has plenty of room for social distancing and has an outdoor patio as well. Current hours are 11 a.m. to 9 p.m. Tuesday through Saturday and 10 a.m. to 5 p.m. on Sunday. The restaurant is closed Mondays.
