New Bakeries, Including Breadsmith, Coming To Wilmington

Two specialty bakeries are coming to Mayfaire Town Center and a second location of one of those bakeries is planned for the Monkey Junction area.

Paige Coniglio, specialty leasing manager at Mayfaire Town Center, recently confirmed leases at two of the center’s units.

Kathy Stone has signed a lease for 820 Town Center Drive, where she will open Breadsmith, a bakery specializing in European-style artisan breads. The Wisconsin-based franchise bakes all of its breads and sweets from scratch each day, without the use of any additives or preservatives. Each loaf of bread is shaped by hand baked in a five-ton, European hearthstone oven.

Stone also plans to open a Monkey Junction location at 5226 S. College Road.

“We saw an opportunity here to serve a couple of neighborhoods in this market,” said Jason Van Acker, marketing manager for Breadsmith Franchising Inc.

Stone, who has always been passionate about cooking and baking, said that when she and husband Steve were seeking franchise opportunities following his early retirement, Breadsmith fell in line with her interests and desire to connect with their newly adopted community.

“One of the things that spoke to us about Breadsmith was their commitment to community involvement,” Kathy Stone said.

All Breadsmith locations across 16 states donate their unsold baked goods at the end of the day to local nonprofits and shelters. For their grand opening celebration, the Wilmington Breadsmiths will donate the first day’s sales to the Good Shepherd Center and plan to partner with a charity once a quarter to donate a day’s sales.

Both Breadsmith locations are expected to open by late spring or early summer.

Alyssa Grace has signed a lease for 980 Inspiration Drive, and will open a brick and mortar location for Lyssa Cakes, the cakery she has operated for the past five years.

Grace, whose parents owned a bakery and ice cream shop while she was growing up, said she learned a lot from her parents, but really got into novelty cakes by watching the TLC television baking show, Cake Boss.

Now she specializes in custom fondant cakes and will offer a variety of whole cakes for purchase at the shop, as well as signature cupcakes like her Baklava cupcake with honey cinnamon cake, a honey walnut filling, topped with buttercream frosting and chopped walnuts. Customers will also be able to create their own cupcakes by selecting a cake flavor, a filling, a frosting and topping for their creations.

Grace expects construction to begin soon and hopes to be open by Easter.

“Our center is about to get a little sweeter with Breadsmith and Lyssa Cakes,” said Coniglio. “We can't wait for them to open this spring.”
