Chef Keith Rhodes, owner of Catch, has announced plans for a new restaurant specializing in vegetarian cuisine.

Voyce, an acronym for "vegetarian options you can enjoy," is a concept that Rhodes says he’s been wanting to pursue for some time. Following several months of lease negotiations in an attempt to reopen Phun Seafood Bar, Rhodes said he was unable to reach acceptable terms with the landlord for the property at 215 Princess St.

Rather than reopen Phun in a new location, Rhodes has decided to focus on his new concept. Voyce, he says, will bring a much-needed heathy eating option to downtown Wilmington.

“While you can find a good burger or sandwich on almost every corner, there are limited options for those who are really trying to change their lifestyle and incorporate healthier eating into their daily routine,” Rhodes said.

Because so much of what Voyce will serve is produce based, the new eatery will also allow Rhodes to work directly with organizations like Feast Down East to obtain his ingredients from local farms. He is committed not only to using local ingredients but to educating the community about nutrition and sustainability.

Rhodes says Voyce will be primarily a carry-out setup with most of the dishes being prepared and packaged in an off-site commissary kitchen. It will be ideal, Rhodes said, for those who work downtown to grab a quick, healthy lunch or to pick up something to take home for dinner.

The menu will feature fresh fruit and juices, salads and dishes made from seasonal produce. Many dishes will accommodate gluten-free and vegan diets and even incorporate supplements such as pro-biotics.

Rhodes says construction is underway at 205 Princess St., and an early 2016 opening is expected.
