Former Canape Chef Launches Pop-Up Noodle Shop

Former Canape founder and chef Matthew Gould has launched a new pop up restaurant, Ronin Pop Up Noodle Shop.

Gould, who declined to comment on his departure from Canape this spring, said the focus of the pop-up restaurant would be Japanese-style ramen noodles. Gould says ramen styles vary greatly throughout Japan, and he enjoys experimenting by taking components of different styles that he likes best and bringing them together.

“I’ve been making ramen for over five years, and it is something that has become a passion of mine,” Gould said.

He said his ramen bowls contain just three main components: homemade noodles, homemade broth and vegetables or meat. For now he’s focusing on vegetarian bowls, which he’ll be serving on Monday nights at Scrap Iron Bicycle Gallery, 118-B Princess St. Gould says he hopes to book similar regular gigs around town.

“The goal of course is to eventually have an established, brick-and-mortar restaurant,” Gould said. “The pop ups are simply a stepping stone to help reach that goal.”
