Brian Mayberry, owner of Dixie Grill and the soon-to-be Roadhouse at 4001 Wrightsville Ave., announced that he will open Capricho, a Mexican restaurant, at 215 Princess St. on May 25.
 
“Renovations are complete and we are awaiting our final inspections,” Mayberry said.
 
Mayberry said the name Capricho can be translated from Spanish to mean "a whim" or "craving”.
 
The 25-seat restaurant will specialize in traditional Mexican fare with a menu that includes a variety of tacos, burritos, quesadillas and “antojitos” or little cravings such as chicarrones, which are fresh fried pork skins, and fried mini tacos called codsitos.
 
Mayberry said that while table and bar seating is limited, there will be a few additional menu items such as fajitas that will be available to customers who are dining in.
 
“Our concept is really an immobile food truck,” Mayberry said. “We will serve authentic Mexican street food you might find on a truck, but here we have a better facility in which to prepare it. I expect about 80 percent of our business will be carry-out.”
 
Capricho will serve lunch and dinner and will be open until 3 a.m. on Friday and Saturday nights to accommodate the late-night crowd.
