CheeseSmith Coming To Brick-and-mortar Location

CheeseSmith food truck owners Molly and Brendan Curnyn are saying goodbye to the truck that helped put them on the map and are putting down roots in the Cargo District.

Molly Curnyn said a brick-and-mortar location has been part of their plan from the start. The couple used the food truck as a means to test the market and develop the proof of concept necessary to get them to the next level.

“The truck was a safe startup option,” Molly Curnyn said. “We knew the truck was a way to build a following and get the funding we would need to open a restaurant.”

Curnyn said the loyalty of their customers throughout the pandemic has been incredible and is a big part of what gave them the confidence to move forward with the restaurant.

And while the couple considered holding on to the truck once they open at 624 S. 17th St. this summer, it’s so hot during the summer months that it can reach 120 degrees inside the truck with the grill and fryer going. Plus, food trucks are notorious for having mechanical issues, so after much consideration, they’ve decided to focus all their energy and attention on the new location.

The Curnyns said that while they did scout potential restaurant space downtown and along Castle Street, they chose the Cargo District for its affordability and potential for growth. 

“As soon as we went into the Cargo District we loved it and knew that was where we want to be,” Molly Curnyn said. “It’s a very cool up-and-coming area with so much going on.”

The building is currently under renovations to refresh both the inside and outside. The kitchen will be outfitted with new appliances and there will be new flooring and paint throughout. Curnyn said there will be inside seating for about 40 to 50 guests, as well as an outdoor area with sunshades and picnic tables.

As for the menu, CheeseSmith will be able to offer a wider range of grilled cheese sandwiches, sides and desserts, as well as a few cold sandwiches for the summer months.

The model will be casual counter service and the Curnyn’s hope to serve beer and wine as well.

A June opening is anticipated.
